In the beautiful island of Puerto Rico, pasteles are considered by many “Boricuas” to be the dish most representative of their cocina criolla, especially around Christmas-time. The masa or batter, consists of grated green banana, green plantain, eddoe (yautía), potato, and tropical pumpkin. Either a chicken or pork stuffing is used, along with milk, and annatto oil.
